Amy Lanza's Quick Soak Fruity Bircher Oats

Updated: Jul 22, 2020

As Amy said on her instagram post,

It’s time to get fruity and gut healthy this morning! 🙏🏼🌈

When it comes to breakfast, oats are always a favourite of mine and in the summer months, overnight oats are a real winner… but I don’t always remember to soak them the night before. So, I tried out a quicker version (30-60 minutes) and I’m hooked! I am also so interested in gut health…

Now on to Amy's recipe.

Serves 1

Ingredients:

50g oats

1 apple, grated

1 tbsp chia seeds

100ml plant-based milk

1 x 20ml JIN JIN

To serve: fresh berries, coconut yoghurt, nut butter, granola, cacao nibs, maple or fruit syrup

Method:

1. Add the oats, grated apple, chia seeds, milk and Jin Jin to a bowl and stir for a couple of minutes. Place in the fridge for 30-60 minutes until thick and creamy.

2. Serve with mashed raspberries, nut butter, coconut yoghurt, granola, some cacao nibs and maple or fruit syrup.

.... and enjoy
