We are over the moon to share that JIN JIN was featured in last night’s spectacular launch of Fortnum & Mason’s Food & Drink Studio Autumn Season, which is themed around all things Fungi! This season celebrates the incredible versatility and richness of mushrooms, and we are thrilled to be part of the occasion with a featured role in a specially crafted cocktail—the Mushroom Mule.


For those unfamiliar, Fortnum & Mason’s Food & Drink Studio is an iconic space that brings together the finest in food and drink innovation, and this autumn, they’re focusing on the fascinating world of mushrooms. The event was a gathering of food lovers, industry experts, and mixologists, all excited to explore the unique culinary possibilities mushrooms offer.

What makes this collaboration even more special is that mushrooms are not only the star of Fortnum & Mason’s autumn theme—they’re also a vital part of JIN JIN itself! Our enzymatic concentrate is crafted from over 35 raw and natural ingredients, including medicinal mushrooms, making it a perfect addition to this fungi-focused season. The fermentation process we use brings out the full potential of each ingredient, resulting in a nutrient-packed concentrate that enhances both the flavour and health benefits of any dish or drink it touches.


 

The Mushroom Mule – A Must-Try Cocktail Featuring JIN JIN

One of the highlights of the evening was the Mushroom Mule, an inspired cocktail that perfectly captures the earthy, rich flavours of mushrooms with a refreshing twist. Created by Fortnum & Mason’s Head Bartender, this drink combines mushroom distillate, zesty lime, and JIN JIN’s natural fermented essence, with the warming bite of ginger beer to top it all off. It’s a harmonious blend that celebrates the season and highlights the versatility of fungi.


Here’s how you can make this sensational cocktail at home:

The Mushroom Mule Recipe:

  • 50ml Mushroom Distillate

  • 25ml Fresh Lime Juice

  • 15ml JIN JIN (featuring mushrooms in its formulation)

  • Ginger Beer (to top up)

  • Fresh Ginger (to garnish)


Instructions:

  1. Add the Mushroom Distillate, Lime Juice, and JIN JIN to a highball glass with cubed ice.

  2. Top up the mixture with Ginger Beer

  3. Garnish with a slice of fresh Ginger and mint
